Sarso saag, also known as Mustard Saag, is a traditional Punjabi dish popular in Northern India. It is made from mustard greens that are finely chopped and cooked with various spices. The dish has a distinctive pungent and slightly bitter flavour, which is balanced by the use of ingredients such as garlic, ginger, and green chillies.
To prepare Sarso saag, the mustard greens are first washed and then boiled until soft. They are then pureed or finely chopped and cooked with a tempering of cumin seeds, turmeric, and red chilli powder. The dish is usually served with makki di roti (corn flatbread) and a dollop of fresh butter.
